Well, I really enjoyed my first week of CSA vegetables. Tonight I get to put the box out on the porch for week 2. I am so excited to see what I'll receive. Below are a couple of the ways that I prepared the vegetables this week. I also made a delicious stir fry with the mizuna but it was too dark for good pictures.
This was such a light, refreshing, and healthful salad. I had the leftovers for lunch today - delicious!
Strawberry Salad with Honey Balsamic Vinaigrette
CSA spring mix, almonds, feta, and fresh strawberries
My daughter Cailyn's favorite salad dressing:
Honey Balsamic Dressing

Ingredients
1/2 cup balsamic vinegar
1/4 cup honey
1/4 cup olive oil
1 teaspoon soy sauce
Directions
Whisk together the vinegar, honey, olive oil, and soy sauce until the honey has dissolved, and the dressing is smooth.
We had some unexpected Memorial Day guests in our pool.
Don't worry! My husband Matt rescued all of the baby ducks.

ReplyDeleteHow lucky for these baby ducks that your husband was there to rescue them ! It happened here too and they were rescued from a squirrel who was planning to have them for lunch; your salad looks good and I am wanting some in this heat!

ReplyDeleteI am sucker for ducks. We live near a lake and many ponds and the ducks wander all spring looking for nests. They always elicit smiles. The salads are grand -a mixture of spring and summer.

I remember my the first time I had strawberies in my salad was at my grandmas house. Boy she was progressive. It's still a favorite of mine. Your dressing sounds amazing!
