Best Blueberry Pancakes

This is the very first recipe that I ever posted and I think that it is deserving of a re-post. My family loves these pancakes and it is my go-to pancake recipe.  Blueberry pancakes are my favorite which is only natural since the blueberry is NJ's state fruit.  I can't wait for some fresh blueberries from Emery's Blueberry Farms in New Egypt, NJ!   If you live anywhere in the area it is a great place to visit and pick your own fresh, organic blueberries.  I made these with frozen blueberries from Trader Joe's - still very good.  The whipped egg whites make these pancakes nice and fluffy.  A little pat of Kerrygold Irish butter (love it!) and some warmed real maple syrup - perfect pancakes!  Have a great weekend!

  5. Saving this for blueberry season in MN which is June. I always knew Jersey had the best tomatoes - but did not know about the blueberries. Oh I love them. I forage them. I fight bears for them (well... almost).
